Paratha Stuffing from Sabzis
Ingredients:
For Dough:
2 cups wheatflour
1/2 tsp. salt
Water
For Filling:
1 cup any leftover vegetable (except bittergourd and veggies with thick or running gravies)
1 onion finely chopped
1 capsicum finely chopped
2 green chillies finely chopped(optional)
1" piece ginger, finely chopped
2 flakes garlic crushed (optional)
1 tbsp. wheat flour or bread crumbs
salt to taste
1 tbsp. oil
oil to shallow fry
Method:
1. Mix salt and flour, knead into a pliable smooth dough with enough water.
2. Cover with a moist cloth and keep for 15 minutes.
Method For Filling
1. Mash leftover vegetable such that there are no large chunks, keep aside.
2. Heat oil in a saucepan.
3. Add onions,capsicum, stirfry for a minute.
4. Add ginger, garlic, chillie, stirfry further for a minute.
5. Add salt, mashed vegetable, any further required masalas as per taste.
6. Sprinkle flour or crumbs, mix and allow all extra moisture to soak.
7. Take off fire, cool completely.
To Proceed:
1. Take a pingpong sized ball of dough.
2. Flatten and roll to a 4" wide circle.
3. Place a tbsp. of filling in center, bring edges to center.
4. Press ends together like a pouch, press down firmly with palm.
5. Dust with flour, roll to 6" wide circle.
6. Heat skillet, roast on both sides till golden brown.
7. Use oil to shallow fry paratha till crisp.
8. Serve hot with ketchup or chutney.
Making time: 30 minutes Makes: 7-8 parathas
