Pineapple Cake


Cake
* 1½ cup flour
* 1 tsp baking powder
* 1 tsp baking soda
* 1 cup white sugar
* ½ tsp salt
* ½ tsp vanilla
* 1 tbsp white vinegar
* 5 tbsp vegetable oil
* 1 cup pineapple juice

Icing

* 2½ cup tbsp flour
* 1/8 tsp powdered ginger
* ½ cup milk
* ¼ cup butter
* ½ cup cream cheese
* ¼ tsp salt
* 1 cup icing sugar
* ¼ cup crushed pineapple

Preparation Cake
* Sift flour, baking powder, baking soda, sugar and salt into a bowl.
* Put pineapple juice into a saucepan and heat to lukewarm. Add a small quantity of crushed pineapple to it.
* Add vanilla, vegetable oil and vinegar to the mixture of sifted ingredients. Quickly pour lukewarm pineapple juice into the bowl and beat the whole mixture well.
* Preheat oven for 10 minutes at 350 F.
* Pour the batter into an ungreased pan and heat it for 30 minutes at 350 F

Icing
* Mix flour, powdered ginger and milk in a small saucepan and cook the mixture over medium heat. Stir the mixture contantly and heat it until it forms a thick paste.
* Cool the mixture till it is lukewarm.
* Mix butter, cream and crushed pineapple together.
* Add lukewarm flour paste, salt and icing sugar to the mixture. Beat until the mixture is fluffy. Refrigerate the mixture for an hour to firm up the icing.
* Put the icing on the cooled cake.
