Tacos

Ingredients:
2 red potatoes
1 small onion
1 bell pepper
1 green onion
Few whole wheat tortillas
2 tbsp salsa
2 tomatoes
A bit of oil
Fresh cilantro
Salt and pepper to taste
1 tsp of oregano and basil leaves
1 tsp chili and cumin powder
1 tsp Lemon juice (optional)

Method:
1. Dice up potatoes and cook in pan that has been lightly covered with oil.
2. Add diced onions, bell pepper, green onions until brown.
3. Also add spices and diced tomatoes. Cook until potatoes are done. Add fresh cilantro
4. Warm tortillas and add potato mixture to it.
5. Fresh lemon juice and salsa are added to the tortillas.

Mexican salsa method:

Ingredients:
4 medium fresh tomatoes, peeled and chopped
1/2 cup finely chopped onion (up to 1 cup)
1/2 cup finely chopped celery
1/4 cup finely chopped fresh green pepper (bell pepper)
1/4 cup oil
2 tbsp finely chopped fresh green chiles
2 tbsp red wine vinegar
1 tsp mustard seed
1 tsp cilantro (coriander) seed, crushed (or fresh cilantro leaves)
1 tsp salt

Directions:
Combine all ingredients. Cover and chill, stirring occasionally. Serve with corn chips.

Fact: salsa actually means sauce in Spanish. It can be served hot, cold, chunky or runny. Salsa can be used as a topping for a dish or as a basic ingredient to complement other ingredients in a recipe and of course, as a dip with tortilla chips.
