Palak Paneer Toasts

Ingredients:
11/2tbsp butter
4 slices brown bread
½ tsp crushed garlic
100gm leaves of spinach washed and shredded
150gm paneer
5tbsp mozrella cheese grated
1tbsp chopped coriander
1/4tsp salt,pepper or to taste
¼ tsp red chilli flakes

Method: Wash and shred spinach leaves into ribbons.
• Heat butter in kadahi or pan .Add crushed garlic and stir.Add spinach and cook till all the moisture of spinach evaporates.Remove from heat.
• Mix grated paneer,coriander and 4tbsp of mozrella cheese,leaving behind 1tbsp for topping.
• Add cooked spinach to the paneer and mix well.Add salt and pepper.
• Toast the slices and spread mixture on toast.Sprinkle some mozrella cheese and red chillies flakes too.
• Grill in oven at 210 degree for 2-3 min.
• Cut into triangles and serve hot.
